Two Missouris: The Cropland North and the Acorn-Driven Ozarks
Missouri reports one deer harvest, but it comes from two very different states. The northern and western counties are open cropland: stable, productive, predictable. The southern Ozarks are forested hill country whose harvest lurches up and down with the acorn crop. Read as one number, Missouri looks volatile; read as two regions, the volatility has an address.

IOne number, two states
Missouri is split down the middle by habitat. North of the Missouri River and across the western counties, the land is row-crop and pasture: open, fertile, and easy to hunt, with deer concentrated on obvious food and edges. South and east, the Ozark Plateau is a different country entirely: heavily forested hills, thin soils, and mast-producing oak. The two regions grow deer differently, hold them differently, and give them up to hunters differently. A single statewide harvest figure averages them into a number that describes neither.
IIThe acorn switch
The mechanism behind the Ozark volatility is mast. In a heavy acorn year, forest deer have abundant food spread across the timber floor; they move less, travel shorter distances, and are far harder to pattern and kill. Harvest in the forested counties drops: not because there are fewer deer, but because the deer stop coming to the places hunters wait. In a poor mast year the reverse happens: deer range widely for food, and harvest climbs. The northern cropland is insulated from this switch because its deer are tied to agricultural food sources that are there every year regardless of the oaks. One region runs on a variable the other doesn't have.
The Ozarks don't lose deer in a big acorn year. They lose contact with them. The harvest falls because the deer stop showing up, not because they stop existing.

The counties that top Missouri's harvest tables are consistent for a reason: they are where agriculture concentrates deer on food that does not fail. Franklin and Jefferson in the east-central belt, and northern counties like Macon, lead year after year with little drama. If you want a predictable Missouri hunt, the map points north and to the ag country. If you want the Ozarks, you are also buying their variance.
IVWhat it means
The practical lesson is that a Missouri hunter should never plan off the statewide number. A 15% statewide drop can be a quiet year in the north and a collapse in the Ozarks, or the reverse. The average hides which. Before a season, the useful questions are regional: what did the acorn crop do this year, and which side of the habitat line is the hunt on?
